Even Greener Than Before - Commercial Dishwashers & ENERGY STAR 3.0

Dishwashing

Effective July 27, 2021, all commercial dishwashers sold with the ENERGY STAR label will have to meet new, more stringent guidelines and testing requirements set by the ENERGY STAR program, a joint program between the U.S. Environmental Protection Agency and the Department of Energy. Hobart is ready with dishmachine models from across our entire product line that are certified to the new standards.

It’s been almost 10 years since the last update to ENERGY STAR requirements for commercial dishwashers were released. In that time, Hobart has made big advancements in technology that improve the energy efficiency of commercial dishmachines, from energy recovery technology that recycles heat into the booster, to wash systems designed for peak performance while using less water and energy. The new requirements take these advancements into consideration, and give consumers confidence that when they purchase an ENERGY STAR rated commercial dishwasher they are getting a product that meets updated standards for energy savings.

What to Expect from ENERGY STAR 3.0

The new ENERGY STAR 3.0 criteria was developed through several rounds of webinars, stakeholder meetings and draft documents, with input from stakeholders across the industry, including a committee from ASTM International.

The new requirements include:

  • Lower limits for idle energy consumption.
  • New criteria that set limits for washing energy consumption.
  • Water consumption limits remain the same.
  • Recognition of products with heat recovery technology.
  • Adjustment for primary hot water heater savings.
  • Alignment with updated industry test methods (defined by ASTM), terms and definitions.

While there is no national requirement to purchase an appliance that is ENERGY STAR rated, some states have adopted regulations based on ENERGY STAR efficiency requirements. With these standards in place, states can decrease energy use, save consumers and business money, and reduce greenhouse gases and other pollutants. Making a Positive Impact on the Environment

According to ENERGY STAR, if all commercial dishwashers were ENERGY STAR certified to version 3.0 standards, more than 4.3 billion pounds of greenhouse gas emissions would be prevented. Hobart has done our part by updating and testing all our dishmachine models to meet the new ENERGY STAR 3.0 requirements. All new Hobart branded, recirculating electric dishmachines meet the new standards (ENERGY STAR does not certify gas and steam units). A dishmachine that meets ENERGY STAR 3.0 can help operators save 17% or more over older, non-ENERGY STAR recognized models from improved energy consumption and performance.

For 14 consecutive years, Hobart has earned recognition as an ENERGY STAR Partner of the Year, the nation’s highest honor for energy efficiency, and complying with these new standards is part of Hobart’s longstanding commitment to delivering on high standards of efficiency across all of our dishmachine lines. Foodservice operators will find Hobart Base, Ventless and Advansys™ models across our entire portfolio of commercial dishwashers that are certified to the new 3.0 standards.

Keeping your dishmachine clean and running smoothly is a key factor in making sure it runs efficiently and washes properly, and it also helps prevent downtime due to equipment failure or breakdowns. Even with the self-cleaning technology found on some of today’s machines, keeping a dishmachine in top shape still depends on the effort of your staff to make sure everything is clean at the end of each shift.

The 3 P's of Good Dishmachine Care

April 29, 2025 by Hobart Dishroom

One of the most frustrating things to deal with as a foodservice operator is an equipment failure. When your grill won’t fire up you can’t cook, if the walk-in isn’t cooling you lose inventory, and when the dishmachine goes down you’re forced to revert to manual washing – or serving food on disposables. This adds cost and labor hours to busy operations.

Taking good care of your commercial dishwasher significantly reduces the chance of unscheduled downtime. The old adage, “An ounce of prevention is worth a pound of cure,” holds true when it comes to getting the most out of your dishmachine,

Whether you’re installing your first commercial dishwasher, or updating one that’s at the end of its service life, there are many benefits to investing in a new dishmachine for your K-12 foodservice operation. New dishmachines use less water, energy and chemicals than older models, and using a commercial dishwasher instead of a three-compartment sink can cut water use by almost 70% and labor time up to 50%. The labor headwinds are still strong for restaurants. According to research from the National Restaurant Association, 45% of operators expect competition from other restaurants to be more intense this year. And an equal number (45%) say they will need more employees to support customer demand. Add to that rising wages and continued fighting for labor with other industries.

Everybody Hates to Clean the Dishmachine

February 19, 2025 by FE&S Magazine

At the end of a long day, probably the last thing anyone in a foodservice operation wants to do is to clean the dishmachine. It takes time — right at the point when people want to go home. And dealing with a dirty dishmachine is not always the most pleasant task. It’s one of those jobs that it would be really easy to put off until tomorrow…or next week. But an improperly cleaned dishmachine can have adverse effects on both front- and back-of-house operations.
